Ingredients
Scale
- 1 pound ground beef
- 1 cup long-grain rice
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, cooking 2–3 minutes until soft and fragrant.
- Add the ground beef, breaking it apart as it cooks. Brown for 5–7 minutes, draining excess fat if needed.
- Stir in the rice, beef broth, diced tomatoes (with juice), Italian seasoning, salt, and pepper.
- Bring the mixture to a gentle boil, then reduce heat to low, cover, and simmer 20–25 minutes, until rice is tender and liquid absorbed.
- If using, sprinkle cheddar cheese on top, cover, and let melt for 2–3 minutes.
- Remove from heat, garnish with parsley, and serve warm.
Notes
- Swap beef broth for chicken or vegetable broth if preferred.
- Add diced bell peppers or mushrooms for extra veggies.
- For a creamy version, stir in a splash of heavy cream before serving.
