Description

This hearty Beef and Tomato Hamburger Rice is a comforting one-pan dinner that brings together tender ground beef, juicy tomatoes, and fluffy rice in a rich, savory broth. It’s the kind of simple weeknight meal that feels like home warm, filling, and packed with flavor in every bite.

Ingredients

Scale
  • 1 pound ground beef
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, cooking 2–3 minutes until soft and fragrant.
  2. Add the ground beef, breaking it apart as it cooks. Brown for 5–7 minutes, draining excess fat if needed.
  3. Stir in the rice, beef broth, diced tomatoes (with juice), Italian seasoning, salt, and pepper.
  4. Bring the mixture to a gentle boil, then reduce heat to low, cover, and simmer 20–25 minutes, until rice is tender and liquid absorbed.
  5. If using, sprinkle cheddar cheese on top, cover, and let melt for 2–3 minutes.
  6. Remove from heat, garnish with parsley, and serve warm.

Notes

  • Swap beef broth for chicken or vegetable broth if preferred.
  • Add diced bell peppers or mushrooms for extra veggies.
  • For a creamy version, stir in a splash of heavy cream before serving.
