Ingredients

  • 1 pound beef stew meat, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 1 bell pepper, chopped
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups green beans, trimmed and cut into 1-inch pieces
  • 1 cup frozen peas
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
  3. Add the sliced carrots, celery, and bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Return the browned beef to the pot and pour in the beef broth and diced tomatoes. Stir in the dried thyme, dried oregano, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 1 hour, stirring occasionally.
  6. After 1 hour, add the green beans and frozen peas to the pot. Continue to simmer for an additional 20-30 minutes, or until the vegetables are tender and the beef is fork-tender.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
