- 1 pound beef stew meat, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 stalks celery, sliced
- 1 bell pepper, chopped
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups green beans, trimmed and cut into 1-inch pieces
- 1 cup frozen peas
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
- Add the sliced carrots, celery, and bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
- Return the browned beef to the pot and pour in the beef broth and diced tomatoes. Stir in the dried thyme, dried oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 1 hour, stirring occasionally.
- After 1 hour, add the green beans and frozen peas to the pot. Continue to simmer for an additional 20-30 minutes, or until the vegetables are tender and the beef is fork-tender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
