Instructions
- Wash the broccoli florets well, then pulse them in a food processor until they resemble fluffy rice grains.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3–4 minutes until softened.
- Stir in the minced garlic and grated carrot, letting them cook for 2 minutes until fragrant.
- Add the broccoli rice and peas, stir thoroughly, and cook for 5–7 minutes until the broccoli is tender but bright green.
- Season with salt, pepper, soy sauce (optional), and lemon juice. Cook for 1 more minute to blend the flavors.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- Don’t over-process the broccoli or it will turn mushy; quick pulses work best.
