  • 1 tablespoon soy sauce (optional)
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the broccoli florets well, then pulse them in a food processor until they resemble fluffy rice grains.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook for 3–4 minutes until softened.
  3. Stir in the minced garlic and grated carrot, letting them cook for 2 minutes until fragrant.
  4. Add the broccoli rice and peas, stir thoroughly, and cook for 5–7 minutes until the broccoli is tender but bright green.
  5. Season with salt, pepper, soy sauce (optional), and lemon juice. Cook for 1 more minute to blend the flavors.
  6. Remove from heat and garnish with fresh parsley before serving.

Notes

  • Don’t over-process the broccoli or it will turn mushy; quick pulses work best.
  • For extra flavor, add a dash of sesame oil or a sprinkle of chili flakes.
