  • 4 medium potatoes, thinly sliced
  • 1 pound smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté for 3–4 minutes until soft and fragrant.
  3. Add sliced smoked sausage and cook for another 5 minutes until lightly browned.
  4. In a bowl, whisk together sour cream, milk, paprika, salt, and pepper until smooth.
  5. In a greased 9×13-inch baking dish, layer half of the potatoes, then half of the sausage mixture, and half the shredded cheese. Repeat the layers with the remaining ingredients.
  6. Pour the sour cream mixture evenly over the top. Sprinkle breadcrumbs if using.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake another 15–20 minutes, or until potatoes are tender and top is golden.
  8. Let it rest for a few minutes before serving.

Notes

  • For even creamier results, use a mix of cheddar and mozzarella cheese.
  • You can peel or leave the skin on the potatoes both work great!
  • Swap sour cream with Greek yogurt for a slightly tangier flavor.
