- 4 medium potatoes, thinly sliced
- 1 pound smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup breadcrumbs (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté for 3–4 minutes until soft and fragrant.
- Add sliced smoked sausage and cook for another 5 minutes until lightly browned.
- In a bowl, whisk together sour cream, milk, paprika, salt, and pepper until smooth.
- In a greased 9×13-inch baking dish, layer half of the potatoes, then half of the sausage mixture, and half the shredded cheese. Repeat the layers with the remaining ingredients.
- Pour the sour cream mixture evenly over the top. Sprinkle breadcrumbs if using.
- Cover with foil and bake for 45 minutes. Remove foil and bake another 15–20 minutes, or until potatoes are tender and top is golden.
- Let it rest for a few minutes before serving.
Notes
- For even creamier results, use a mix of cheddar and mozzarella cheese.
- You can peel or leave the skin on the potatoes both work great!
- Swap sour cream with Greek yogurt for a slightly tangier flavor.
