Description

This cheesy baked squash recipe is the perfect combination of savory flavors and tender texture. With a crispy, golden cheese topping, it’s a simple yet delicious side dish that works for any meal. The squash rounds are lightly seasoned with garlic, salt, and pepper, topped with mozzarella and parmesan, and baked to perfection. A sprinkle of fresh herbs at the end takes this dish to the next level!

Ingredients

Scale
  • 2 medium yellow squash (or zucchini), sliced into 1/4-inch rounds
  • 12 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley or basil, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a bowl, toss the squash rounds with olive oil, salt, pepper, and garlic powder (if using) until evenly coated.
  3. Arrange the squash rounds in a single layer on the baking sheet, without overlapping.
  4. Sprinkle mozzarella and Parmesan evenly over each round.
  5. Bake for 15–20 minutes, or until the squash is tender and the cheese is melted and golden.
  6. Optionally, broil for 1–2 minutes at the end to get the cheese bubbly and crispy.
  7. Remove from the oven, let cool slightly, and sprinkle with fresh herbs if desired.

Notes

  • You can use zucchini instead of yellow squash for a slightly different flavor.
  • Feel free to add a bit of red pepper flakes if you like a little spice.
  • The cheese mixture is flexible – feel free to experiment with different cheeses like cheddar or gouda!
