- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Slice zucchinis into 1/4-inch thick rounds and arrange on a parchment-lined baking sheet.
- In a bowl, mix mozzarella, Parmesan, breadcrumbs, garlic, oregano, basil, salt, and pepper.
- Spoon the cheesy mixture onto each zucchini slice, gently pressing it down.
- Bake for 15–20 minutes, until the cheese is melted, bubbly, and golden.
- Let cool slightly, garnish with fresh parsley, and serve warm.
Notes
- For extra crispiness, broil the rounds for an additional 1–2 minutes at the end of baking.
- Swap mozzarella for sharp cheddar or pepper jack for a spicier kick.
- Best enjoyed fresh, but leftovers can be reheated in the oven or air fryer.
