- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 cup salsa
- 1 tablespoon taco seasoning
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Tortilla chips for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, stir together the shredded chicken, black beans, corn, diced tomatoes, cooked rice, salsa, taco seasoning, and sour cream. Season with salt and pepper.
- Spread the mixture evenly into a greased 9×13-inch baking dish.
- Sprinkle shredded cheddar cheese evenly over the top. Add fresh cilantro and crushed tortilla chips if using.
- Bake for 25–30 minutes, or until the cheese is melty and the casserole is bubbling around the edges.
- Let cool for a few minutes before serving.
Notes
- You can swap the chicken with leftover rotisserie chicken for extra convenience.
