Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add chicken and sear 5–7 minutes per side until golden and cooked through. Transfer to a plate.
  3. In the same skillet, sauté garlic for 1 minute. Add spinach and cook until wilted, about 2–3 minutes.
  4. Lower heat and stir in ricotta, cream, Parmesan, and red pepper flakes. Mix until creamy and smooth.
  5. Return chicken breasts to skillet, spoon sauce over the top, and sprinkle with mozzarella.
  6. Cover and simmer for 5 minutes, or place under the broiler until cheese is bubbly and slightly browned.
  7. Garnish with fresh parsley and serve hot.

  • Use whole milk ricotta for extra creaminess.
