- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1/2 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large oven-safe skillet over medium heat. Add chicken and sear 5–7 minutes per side until golden and cooked through. Transfer to a plate.
- In the same skillet, sauté garlic for 1 minute. Add spinach and cook until wilted, about 2–3 minutes.
- Lower heat and stir in ricotta, cream, Parmesan, and red pepper flakes. Mix until creamy and smooth.
- Return chicken breasts to skillet, spoon sauce over the top, and sprinkle with mozzarella.
- Cover and simmer for 5 minutes, or place under the broiler until cheese is bubbly and slightly browned.
- Garnish with fresh parsley and serve hot.
