This Chicken Scampi with Garlic Parmesan Rice is a comforting, flavor-packed dinner that feels fancy but is easy enough for any night of the week. Juicy, golden chicken breasts are simmered in a buttery garlic lemon sauce and served over creamy, cheesy rice for a meal that’s pure comfort on a plate.

- 4 boneless, skinless chicken breasts
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup chicken broth
- 1/2 cup white wine (or additional chicken broth)
- 1 lemon, juiced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1 cup long-grain rice
- 2 cups water
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
Instructions
- In a large skillet, melt 1/4 cup of butter over medium heat. Season chicken breasts with salt and pepper, then add them to the skillet. Cook for 6–7 minutes per side, or until golden and fully cooked. Remove from skillet and set aside.
- Add the remaining butter and olive oil to the skillet. Sauté garlic and red pepper flakes for about 1 minute, until fragrant.
- Stir in chicken broth and white wine, scraping up any browned bits. Simmer for 5 minutes.
- Add lemon juice and parsley. Return chicken to the skillet and simmer for 5 more minutes to soak up the flavors.
- Meanwhile, in a saucepan, bring 2 cups of water to a boil. Add rice and a pinch of salt. Reduce heat to low, cover, and cook for 15–20 minutes, or until water is absorbed and rice is tender.
- Once rice is cooked, stir in Parmesan cheese until creamy and combined.
- Serve chicken scampi over a bed of garlic Parmesan rice, spoon sauce on top, and garnish with extra parsley if desired.
Notes
- For extra creaminess in the rice, stir in a splash of cream or an extra tablespoon of butter with the Parmesan.
- This dish also pairs beautifully with sautéed spinach or roasted veggies on the side.
- If you don’t cook with wine, just use all chicken broth it’s just as flavorful!
