- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup sliced mushrooms
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing for 2–3 minutes until softened and fragrant.
- Add the ground turkey, breaking it apart with a spatula. Cook for 5–7 minutes until fully browned. Season with salt, black pepper, and thyme.
- Stir in the sliced mushrooms and cook for 3–4 minutes until they soften and release their juices.
- Mix in the orzo, then pour in the chicken broth. Bring to a boil, then reduce the heat to low. Cover and let simmer for 10–12 minutes, stirring occasionally, until the orzo is tender and the broth is mostly absorbed.
- Pour in the heavy cream and stir in the Parmesan cheese until the sauce is smooth and creamy. Let it cook for another 2–3 minutes until fully heated.
- Remove from heat, garnish with fresh parsley, and serve warm.
