  • 1 lb shrimp, peeled and deveined
  • 1 cup grits
  • 4 cups chicken broth
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, bring chicken broth to a boil. Whisk in grits and reduce heat. Simmer until thickened, about 5–7 minutes.
  3. In a skillet, melt butter over medium heat. Sauté onion, bell pepper, and garlic until soft and fragrant.
  4. Add shrimp and Cajun seasoning; cook until shrimp are pink and just cooked through, about 3–4 minutes.
  5. Stir heavy cream and half of the shredded cheddar into the cooked grits until creamy.
  6. Fold in the shrimp mixture and transfer everything to a greased casserole dish.
  7. Sprinkle the remaining cheddar on top.
  8. Bake for 25–30 minutes, or until the cheese is melted and bubbly with golden edges.
  9. Garnish with chopped green onions and serve warm.

Notes

  • For extra flavor, use smoked cheddar or add a dash of hot sauce.
  • Want a spicier kick? Add diced jalapeños when cooking the bell peppers.
