  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with Italian seasoning, salt, and pepper.
  2. Cook chicken for 6–7 minutes per side, until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic for 1 minute until fragrant. Add cherry tomatoes and cook for 2–3 minutes until softened. Stir in spinach until wilted.
  4. Reduce heat to medium-low. Pour in heavy cream and stir well. Mix in Parmesan until smooth and creamy.
  5. Return chicken to the skillet, spoon sauce over the top, and let simmer for 3–5 minutes.
  6. Finish with basil and a squeeze of lemon juice. Serve hot over pasta, rice, or with crusty bread.
