Instructions
- In a large bowl, combine the beef stew meat with the onion soup mix, tossing until all the meat is evenly coated.
- Transfer the coated beef to the crockpot. Add the cream of mushroom soup, beef broth, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
- Stir gently to combine everything, making sure the beef is submerged in the sauce as much as possible.
- Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the beef is very tender and the flavors have melded together.
- If you prefer a thicker gravy, whisk the cornstarch with the cold water in a small bowl to create a smooth slurry.
- Stir the slurry into the crockpot during the last 30 minutes of cooking, then cover and let the gravy thicken.
- Taste and adjust seasoning with additional salt and pepper, if needed.
- Serve the beef tips and gravy over mashed potatoes, rice, or egg noodles. Garnish with chopped fresh parsley before serving.

- For extra richness, use low-sodium beef broth so you can better control the salt level from the soup mix and canned soup.
- If your beef stew meat pieces are very large, cut them smaller for more even cooking and extra tenderness.
