Description

Crockpot Beef Tips and Gravy is pure cozy comfort food: melt-in-your-mouth beef simmered low and slow in a rich, savory gravy. With just a handful of pantry staples and minimal prep, your slow cooker does all the work. Serve it over fluffy mashed potatoes, rice, or egg noodles for a hearty, family-friendly dinner any night of the week.

Ingredients

Scale
  • 2 pounds beef stew meat, cut into bite-sized pieces
  • 1 packet onion soup mix
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons cold water (for cornstarch slurry, optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the beef stew meat with the onion soup mix, tossing until all the meat is evenly coated.
  2. Transfer the coated beef to the crockpot. Add the cream of mushroom soup, beef broth, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
  3. Stir gently to combine everything, making sure the beef is submerged in the sauce as much as possible.
  4. Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the beef is very tender and the flavors have melded together.
  5. If you prefer a thicker gravy, whisk the cornstarch with the cold water in a small bowl to create a smooth slurry.
  6. Stir the slurry into the crockpot during the last 30 minutes of cooking, then cover and let the gravy thicken.
  7. Taste and adjust seasoning with additional salt and pepper, if needed.
  8. Serve the beef tips and gravy over mashed potatoes, rice, or egg noodles. Garnish with chopped fresh parsley before serving.

Notes

  • For extra richness, use low-sodium beef broth so you can better control the salt level from the soup mix and canned soup.
  • If your beef stew meat pieces are very large, cut them smaller for more even cooking and extra tenderness.
  • This recipe thickens slightly as it cools; if reheating leftovers, you can loosen the gravy with a splash of broth or water.
