- 2 pounds beef stew meat, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup carrots, sliced
- 1 cup mushrooms, sliced
- 2 cups egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Brown the beef on all sides for 5–7 minutes, then transfer to the crockpot.
- In the same skillet, sauté the onion and garlic for 2–3 minutes until softened, then add them to the crockpot.
- Pour in the beef broth and Worcestershire sauce. Add thyme, salt, and pepper. Stir well to combine.
- Add the sliced carrots and mushrooms on top and gently mix them in.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender.
- About 30 minutes before serving, stir in the egg noodles. Cover and cook until softened.
- Serve warm and garnish with fresh parsley.
Notes
- Browning the beef first adds a deeper flavor, but you can skip this step if you need a true dump-and-go method.
- If you like a thicker gravy, stir in a cornstarch slurry (1 tablespoon cornstarch + 1 tablespoon water) during the last 20 minutes.
