  • 2 pounds beef stew meat, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup carrots, sliced
  • 1 cup mushrooms, sliced
  • 2 cups egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Brown the beef on all sides for 5–7 minutes, then transfer to the crockpot.
  2. In the same skillet, sauté the onion and garlic for 2–3 minutes until softened, then add them to the crockpot.
  3. Pour in the beef broth and Worcestershire sauce. Add thyme, salt, and pepper. Stir well to combine.
  4. Add the sliced carrots and mushrooms on top and gently mix them in.
  5. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender.
  6. About 30 minutes before serving, stir in the egg noodles. Cover and cook until softened.
  7. Serve warm and garnish with fresh parsley.

Notes

  • Browning the beef first adds a deeper flavor, but you can skip this step if you need a true dump-and-go method.
  • If you like a thicker gravy, stir in a cornstarch slurry (1 tablespoon cornstarch + 1 tablespoon water) during the last 20 minutes.
