Ingredients

  • 1 medium head of cabbage, chopped
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 1 cup green beans, trimmed and cut into pieces

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Sauté the onion, carrots, and celery for about 5 minutes, or until they begin to soften. Add the garlic and cook for 1 minute more.
  2. Transfer the sautéed vegetables to your crockpot. Add the chopped cabbage, diced tomatoes with their juices, vegetable broth, thyme, oregano, salt, pepper, and bay leaf. Stir well.
  3. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until all vegetables are tender and the flavors are fully developed.
  4. About 30 minutes before serving, stir in the green beans. Remove the bay leaf before serving.
  5. Serve warm and enjoy a nourishing bowl of homemade cabbage goodness.

Notes

  • For added richness, stir in a splash of tomato paste or a squeeze of lemon before serving.
