Description

This Crockpot Chicken and Bisquick Dumplings is cozy, classic comfort food made almost completely hands-off. Tender slow-cooked chicken, soft vegetables, and a savory herb broth are finished with fluffy Bisquick dumplings that steam right on top perfect for a hearty, family-friendly meal that practically cooks itself.

  • 4 boneless, skinless chicken breasts
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1 cup Bisquick mix
  • 1/3 cup milk
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in a single layer on the bottom of the crockpot.
  2. Add the sliced carrots, celery, chopped onion, and minced garlic on top of the chicken.
  3. Pour in the chicken broth, then sprinkle in the dried thyme, dried rosemary, and a good pinch of salt and pepper. Gently stir the vegetables and broth together, leaving the chicken on the bottom.
  4. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is cooked through and very tender.
  5. About 30 minutes before serving, remove the chicken breasts, shred or chop them into bite-sized pieces, and return them to the crockpot. Taste and adjust seasoning with more salt and pepper if needed.
  6. In a small bowl, stir together the Bisquick mix and milk just until combined; the batter should be thick and slightly sticky. Do not overmix.
  7. Drop spoonfuls of the dumpling mixture over the surface of the hot stew in the crockpot, spacing them slightly apart to allow for expansion.
  8. Cover and cook on HIGH for an additional 30 minutes, without lifting the lid, until the dumplings are fluffy and cooked through in the center.
  9. Once the dumplings are done, sprinkle the top with chopped fresh parsley and serve warm straight from the crockpot.

Notes

  • For a slightly thicker, stew-like base, you can stir in 1–2 tablespoons of Bisquick or a cornstarch slurry (1 tablespoon cornstarch + 1 tablespoon water) about 30 minutes before adding the dumplings.
  • If your slow cooker runs hot, start checking for doneness on the low end of the time range so the chicken doesn’t overcook and dry out.
  • Season to taste at the end store-bought broth and Bisquick already contain salt, so you may need less than expected.
