Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 1 cup Bisquick mix
- 1/3 cup milk
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Place the chicken breasts in a single layer on the bottom of the crockpot.
- Add the sliced carrots, celery, chopped onion, and minced garlic on top of the chicken.
- Pour in the chicken broth, then sprinkle in the dried thyme, dried rosemary, and a good pinch of salt and pepper. Gently stir the vegetables and broth together, leaving the chicken on the bottom.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is cooked through and very tender.
- About 30 minutes before serving, remove the chicken breasts, shred or chop them into bite-sized pieces, and return them to the crockpot. Taste and adjust seasoning with more salt and pepper if needed.
- In a small bowl, stir together the Bisquick mix and milk just until combined; the batter should be thick and slightly sticky. Do not overmix.
- Drop spoonfuls of the dumpling mixture over the surface of the hot stew in the crockpot, spacing them slightly apart to allow for expansion.
- Cover and cook on HIGH for an additional 30 minutes, without lifting the lid, until the dumplings are fluffy and cooked through in the center.
- Once the dumplings are done, sprinkle the top with chopped fresh parsley and serve warm straight from the crockpot.
Notes
- For a slightly thicker, stew-like base, you can stir in 1–2 tablespoons of Bisquick or a cornstarch slurry (1 tablespoon cornstarch + 1 tablespoon water) about 30 minutes before adding the dumplings.
- If your slow cooker runs hot, start checking for doneness on the low end of the time range so the chicken doesn’t overcook and dry out.
- Season to taste at the end store-bought broth and Bisquick already contain salt, so you may need less than expected.
