Crockpot Garlic Butter Steak Bites are melt-in-your-mouth tender pieces of sirloin simmered low and slow in a rich, garlicky butter sauce. - 1.5 pounds sirloin steak, cut into bite-sized pieces
- 1/2 cup unsalted butter, divided
- 4 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet over medium-high heat, melt 1/4 cup (half) of the butter.
- Add the steak bites in batches, searing for 2–3 minutes per batch until browned on all sides. Avoid overcrowding the pan so they sear instead of steam.
- Transfer the seared steak bites and any juices to the crockpot.
- In the same skillet, add the remaining 1/4 cup butter, minced garlic, Worcestershire sauce, thyme, rosemary, salt, and black pepper.
- Cook for 1–2 minutes, stirring, just until the garlic is fragrant and the herbs bloom in the butter. Do not let the garlic burn.
- Pour the garlic butter mixture over the steak bites in the crockpot, stirring gently to coat.
- Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the steak is very tender.
- Once cooked, stir the steak bites to coat them fully in the garlic butter sauce.
- Taste and adjust seasoning with extra salt and pepper if needed. Garnish with fresh chopped parsley before serving.
Notes
- Pat the steak dry before searing to help it brown more deeply and develop better flavor.
- Use sirloin for the best balance of tenderness and budget, but you can also use ribeye or strip steak for a richer result.
- Season lightly with salt at first, then adjust at the end Worcestershire sauce already adds saltiness.
