  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Juice of 1 lime
  • Optional: Crumbled feta cheese

Instructions

  1. Place the chicken breasts at the bottom of your slow cooker.
  2. Add white beans, diced tomatoes with green chilies, chicken broth, corn, onion, and garlic.
  3. Sprinkle in cumin, smoked paprika, oregano, salt, and pepper. Stir gently to mix.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender.
  5. Remove chicken, shred with two forks, and return to the slow cooker.
  6. Stir in lime juice and adjust the seasoning to taste.
  7. Serve warm, garnished with fresh parsley and crumbled feta if desired.
