Ingredients

  • 1 pound of ground beef
  • 1 cup of uncooked white rice
  • 2 cups of beef broth
  • 1 can of diced tomatoes (14.5 oz), undrained
  • 1 cup of frozen mixed vegetables
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of Italian seasoning
  • Salt and pepper, to taste
  • 1 cup of shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until cooked through. Drain excess fat.
  3. Add the onion and garlic; sauté for 2–3 minutes until softened.
  4. Stir in uncooked rice, beef broth, diced tomatoes with juice, frozen vegetables, and Italian seasoning. Season with salt and pepper. Bring to a boil.
  5. Reduce heat, cover, and simmer for about 15 minutes until the rice is tender and most of the liquid is absorbed.
  6. Transfer to a greased 9×13-inch baking dish. Sprinkle cheddar cheese evenly on top.
  7. Bake for 20–25 minutes, or until the cheese is melted and bubbly. Serve hot.

Notes

  • Swap cheddar cheese with mozzarella or Monterey Jack for a different flavor twist.
  • You can use brown rice, but increase the cooking time and liquid slightly.
  • Add a pinch of red pepper flakes for a little heat.
