- 1 pound of ground beef
- 1 cup of uncooked white rice
- 2 cups of beef broth
- 1 can of diced tomatoes (14.5 oz), undrained
- 1 cup of frozen mixed vegetables
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of Italian seasoning
- Salt and pepper, to taste
- 1 cup of shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef until cooked through. Drain excess fat.
- Add the onion and garlic; sauté for 2–3 minutes until softened.
- Stir in uncooked rice, beef broth, diced tomatoes with juice, frozen vegetables, and Italian seasoning. Season with salt and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes until the rice is tender and most of the liquid is absorbed.
- Transfer to a greased 9×13-inch baking dish. Sprinkle cheddar cheese evenly on top.
- Bake for 20–25 minutes, or until the cheese is melted and bubbly. Serve hot.
Notes
- Swap cheddar cheese with mozzarella or Monterey Jack for a different flavor twist.
- You can use brown rice, but increase the cooking time and liquid slightly.
- Add a pinch of red pepper flakes for a little heat.
