Ingredients
Scale
- 1 pound ground beef
- 1 cup long-grain white rice
- 1 can (10.5 oz) French onion soup
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup beef broth
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded Swiss cheese
Instructions
- Preheat oven to 350°F (175°C).
- Sauté onions: In a large skillet, heat olive oil over medium heat. Add the sliced onion and cook for about 5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
- Brown the beef: Add ground beef to the skillet, breaking it apart as it cooks. Cook until browned, about 5-7 minutes. Drain excess fat if needed.
- Combine ingredients: Stir in the French onion soup, diced tomatoes (with juice), beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Bring the mixture to a simmer.
- Add rice: Stir in the rice until well combined, then remove from heat. Transfer the mixture to a greased 9×13-inch baking dish.
- Bake: Cover the dish with foil and bake for 30 minutes. Then, remove the foil, sprinkle shredded Swiss cheese on top, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Cool and serve: Let the casserole sit for a few minutes before serving.
Notes
- For extra richness, caramelize the onions longer until golden brown.
- Swap Swiss cheese for Gruyère for a deeper, nuttier flavor.
- Leftovers store well in the fridge for up to 3 days and reheat beautifully.
