For the Meatloaf:

  • 2 lbs ground chicken
  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup whole milk

For the Garlic Parmesan Glaze:

  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large bowl, combine all meatloaf ingredients: ground chicken, Parmesan, panko, eggs, garlic, seasonings, herbs, salt, pepper, and milk. Mix until just combined—avoid overmixing for the juiciest result.
  3. Shape the mixture into a loaf on the baking sheet or press evenly into a loaf pan.
  4. Bake for 40–45 minutes, or until the internal temperature hits 165°F (74°C).
  5. While the meatloaf bakes, prepare the glaze. Melt butter in a small saucepan over medium heat. Add garlic and sauté for 1–2 minutes. Stir in Parmesan and parsley, cooking until the mixture slightly thickens, about 1–2 minutes more.
  6. Once the meatloaf is cooked, brush generously with the garlic Parmesan glaze and return to the oven for 5–7 minutes.
  7. Let rest for 5 minutes before slicing. Garnish with extra parsley and serve warm.

  • Want extra flavor? Add a teaspoon of Dijon mustard to the meatloaf mix.
