- 1 pound ground beef
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 3-4 minutes until the onion is translucent.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the diced potatoes, beef broth, Worcestershire sauce, paprika, thyme, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and let it simmer for 20-25 minutes, or until the potatoes are tender, stirring occasionally.
- Once the potatoes are cooked through, taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
Notes
- For extra flavor, add a dash of smoked paprika or a sprinkle of shredded cheese before serving.
- Make it heartier by stirring in a handful of frozen peas or corn during the last 5 minutes of cooking.
