Haluski – Cabbage and Noodles

  • Author: Avery
  • Total Time: 35 minutes

Description

This cozy Haluski – Cabbage and Noodles – is a simple, budget-friendly comfort dish that turns humble ingredients into something deeply satisfying. Tender egg noodles are tossed with buttery, caramelized cabbage, sweet onions, and a whisper of garlic. It’s hearty enough for a meatless main, quick enough for a weeknight, and nostalgic in all the best ways.

Ingredients

Scale
  • 1 medium head of cabbage, chopped
  • 12 ounces egg noodles
  • 4 tablespoons butter
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon caraway seeds (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package directions until al dente. Drain well and set aside.
  2. While the noodles cook, melt the butter in a large skillet over medium heat.
  3. Add the sliced onion and sauté for about 5 minutes, stirring occasionally, until soft and translucent.
  4. Stir in the minced garlic and cook for about 1 minute, just until fragrant, being careful not to brown it.
  5. Add the chopped cabbage and caraway seeds (if using). Toss to coat in the butter and aromatics.
  6. Cook the cabbage mixture for 10–15 minutes, stirring occasionally, until the cabbage is tender, reduced in volume, and beginning to caramelize at the edges.
  7. Season generously with salt and freshly ground black pepper to taste.
  8. Add the cooked egg noodles to the skillet and toss well until everything is evenly combined and heated through, 2–3 minutes.
  9. Adjust seasoning if needed. Sprinkle with chopped fresh parsley just before serving.

Notes

  • For richer flavor, let the cabbage take on some golden color before adding the noodles; that light caramelization makes a big difference.
  • This dish is naturally simple, so don’t skimp on salt and pepper season in layers as you cook.
  • You can easily double the recipe; just be sure to use a very large skillet or cook the cabbage in two batches to avoid steaming instead of browning.
