  • 1 onion, chopped
  • 2 cloves garlic, minced

  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 (30-ounce) bag frozen hash browns
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent. Drain any excess fat.
  • Season the beef mixture with salt, black pepper, and paprika. Stir to combine.
  • In a large mixing bowl, combine the frozen hash browns, cooked beef mixture, and 1 cup of shredded cheddar cheese. Mix well.
  • In another bowl, whisk together the sour cream, eggs, and milk until smooth. Pour this mixture over the hash brown and beef mixture, stirring to combine.
  • Transfer the entire mixture into a greased 9×13-inch baking dish, spreading it evenly. Top with the remaining 1 cup of shredded cheddar cheese.
  • Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes. Garnish with chopped green onions before serving.

Notes

For extra flavor, try adding diced bell peppers or mushrooms to the beef mixture. You can assemble this casserole the night before and refrigerate, then bake the next day (add 10-15 minutes to cooking time if baking from cold). Leftovers reheat beautifully in the microwave or oven.
