Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups mixed vegetables (frozen or fresh)
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 cups cooked rice or pasta
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  • Add the chopped onion and minced garlic to the skillet, cooking for 2-3 minutes until the onion is translucent.
  • Stir in the mixed vegetables, diced tomatoes, kidney beans, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  • In a large baking dish, combine the cooked rice or pasta with the beef and vegetable mixture, stirring well to combine.
  • Sprinkle the shredded cheddar cheese evenly over the top.
  • Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  • Remove from the oven and let sit for 5 minutes before serving.

Notes

  • Swap kidney beans with black beans or pinto beans for variety.
  • Add a pinch of red pepper flakes for a subtle heat boost.
  • Leftovers store well in an airtight container in the refrigerator for up to 3 days.
  • To make it lower carb, replace rice or pasta with cauliflower rice or zucchini noodles.
