  • 34 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 stalks celery, chopped
  • 1 cup red wine
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the roast with salt and pepper, then sear it on all sides until browned, about 4–5 minutes per side.
  2. Remove the roast and set aside. In the same skillet, sauté the onion and garlic for 2–3 minutes until fragrant.
  3. Place the roast into the slow cooker. Add the onion, garlic, carrots, and celery.
  4. In a bowl, whisk together red wine, diced tomatoes, beef broth, tomato paste, oregano, basil, and bay leaf. Pour over the roast and vegetables.
  5. Cover and cook on low for 8–10 hours (or high for 4–6 hours) until the beef is fork-tender.
  6. Remove the bay leaf. Let the roast rest before slicing. Serve with the vegetables and sauce, garnished with fresh parsley.

Notes

  • For a thicker sauce, remove the lid in the last 30 minutes to let it reduce.
  • You can substitute red wine with additional beef broth if preferred.
  • Leftovers taste even better the next day as the flavors deepen.
