Description
This Italian Tortellini Pasta Salad with Salami and Mozzarella is a vibrant and flavorful dish perfect for potlucks, picnics, or a refreshing make-ahead meal. Cheesy tortellini meets savory salami, creamy mozzarella, and crisp vegetables, all tossed in a tangy Italian dressing. It’s hearty enough to be a main dish but light enough to serve alongside grilled meats or sandwiches.
Ingredients
Scale
- 12 ounces cheese tortellini
- 6 ounces salami, diced
- 8 ounces fresh mozzarella balls, halved
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
-
2 tablespoons of apple cider vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Instructions
- Cook the tortellini according to package directions. Drain and rinse under cold water until cooled.
- In a large mixing bowl, combine tortellini, salami, mozzarella, cherry tomatoes, olives, red onion, and basil.
- In a small bowl, whisk together olive oil, apple cider vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently to coat evenly.
- Cover and refrigerate for at least 30 minutes to let the flavors meld.
- Garnish with extra basil and serve chilled or at room temperature.
Notes
- You can substitute apple cider vinegar with freshly squeezed lemon juice for a light, zesty twist that brightens the flavors of the salad.
- For added protein, toss in some grilled chicken or chickpeas.
- This salad tastes even better the next day once the flavors have melded together.
