- 4 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted
- 1/4 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt, pepper, oregano, basil, and paprika.
- In a baking dish, place the seasoned chicken breasts. Add zucchini slices, cherry tomatoes, olives, and minced garlic around the chicken.
- Drizzle olive oil over the chicken and vegetables.
- Cover the dish with foil and bake for 20 minutes.
- Remove foil, sprinkle feta cheese on top, and bake uncovered for another 10–15 minutes, or until chicken is fully cooked and vegetables are tender.
- Garnish with chopped fresh parsley and serve warm.
