  • 1 zucchini, halved and sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and black pepper, to taste

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add the ground beef, breaking it apart with a spatula, and cook for 5–7 minutes or until browned and cooked through. Drain any excess fat.
  2. Add the sliced onion and minced garlic to the skillet. Cook for 2–3 minutes until the onion softens and becomes fragrant.
  3. Add the red bell pepper and zucchini. Sauté for 4–5 minutes, stirring occasionally, until the vegetables are tender and colorful.
  4. Stir in the cherry tomatoes, oregano, paprika, salt, and pepper. Cook for 3–4 minutes more, until the tomatoes release their juices.
  5. Remove from heat. Garnish with fresh parsley and, if desired, sprinkle with crumbled feta before serving.
