  • 1 can (15.25 oz) black beans, drained and rinsed
  • 1½ cups grilled or blackened corn (fresh or canned)
  • 1 jalapeño, seeded and minced
  • 1/2 cup chopped fresh cilantro
  • Kosher salt and freshly ground black pepper, to taste


Instructions

1. Make the Dressing

In a large mixing bowl, whisk together the mayonnaise, sour cream, fresh lime juice, and taco seasoning until the mixture is smooth, creamy, and fully combined.

2. Build the Salad Base

To the same bowl, add the coleslaw mix, diced red bell pepper, halved grape tomatoes, black beans, grilled or blackened corn, minced jalapeño, and chopped cilantro.

3. Toss to Combine

Using tongs or a large spoon, gently toss all ingredients together until the vegetables are evenly coated in the creamy dressing. Be sure everything is well mixed, but try not to mash the ingredients.

4. Season and Chill

Taste and season with kosher salt and freshly ground black pepper to your liking. For best flavor, cover and refrigerate the slaw for 20–30 minutes to let the flavors meld and the slaw crisp up.
