Description

This One Pan Balsamic Chicken is a colorful, wholesome dinner that brings together tender chicken, caramelized veggies, and the sweet tang of balsamic vinegar all baked together in one dish. Perfect for busy nights when you want big flavor without a sink full of dishes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup halved cherry tomatoes
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 1 bell pepper, sliced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Whisk balsamic vinegar, olive oil, garlic, oregano, thyme, salt, and pepper in a large bowl.
  3. Add chicken breasts, coating well. Marinate at least 15 minutes.
  4. Place chicken in the center of a baking dish or sheet pan. Arrange veggies around.
  5. Pour remaining marinade over the top.
  6. Bake 25–30 minutes, until chicken reaches 165°F (75°C) and veggies are tender.
  7. Rest for a few minutes, then garnish with fresh basil before serving.

Notes

  • For extra flavor, marinate the chicken up to 4 hours in advance.
  • If you like caramelized edges, broil the dish for the last 2–3 minutes.
