- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup feta cheese, crumbled
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the cherry tomatoes, zucchini, red onion, bell pepper, and garlic with olive oil, oregano, thyme, salt, and pepper.
- Arrange the chicken breasts in a baking dish, surrounding them with the seasoned vegetables.
- Pour any leftover oil and seasonings from the bowl over the top.
- Bake for 25–30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Sprinkle the crumbled feta over the top during the last 5 minutes of baking.
- Let rest for a few minutes, then garnish with chopped parsley before serving.
