  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  • In a large skillet or pot, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning.
  • Add the chicken to the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté for about 1 minute, or until fragrant.
  • Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  • Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese, mixing until the cheese is melted and the sauce is smooth.
  • Add the fresh spinach and cook for 2-3 minutes, or until wilted.
  • Return the cooked chicken to the skillet, spooning the sauce over the top. Let it simmer for an additional 2-3 minutes to heat through.
  • Garnish with fresh parsley before serving.

  • For added flavor, sprinkle a touch of red pepper flakes into the sauce.
