Ingredients
Scale
- 8 ounces fettuccine or spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add sliced mushrooms and cook for 5-7 minutes until tender and their moisture is released.
- Pour in vegetable broth and bring to a boil. Once boiling, add fettuccine or spaghetti and cook according to package directions, stirring occasionally.
- When the pasta is al dente, lower the heat and stir in heavy cream and grated Parmesan cheese. Stir until the cheese melts and the sauce becomes creamy.
- Add fresh spinach and stir until wilted. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley and extra Parmesan if desired.
Notes
- For added flavor, try using a mix of mushrooms such as cremini and shiitake.
- Swap out heavy cream for half-and-half for a lighter version.
- This recipe works well with whole-wheat pasta for an extra boost of fiber.
