One-Pot Pasta with Ground Turkey & Spinach

Description

This comforting one-pot meal brings together tender pasta, savory ground turkey, and fresh spinach in a creamy, flavorful sauce. It’s quick, hearty, and perfect for busy weeknights plus, there’s minimal cleanup since everything cooks in just one pan!


Ingredients

  • 12 ounces penne or rotini
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups fresh spinach
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 3 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • Optional: fresh basil for garnish

Instructions

  1. Warm olive oil in a large pot over medium heat. Sauté the onion for 3–4 minutes until soft and translucent. Add garlic and cook for 1 minute more.
  2. Add ground turkey, breaking it apart with a spatula. Cook 5–7 minutes until browned and fully cooked. Season with salt, pepper, and Italian seasoning.
  3. Stir in diced tomatoes with their juices and chicken broth. Bring to a boil, then add pasta. Stir to ensure it’s submerged.
  4. Reduce heat to low, cover, and simmer 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  5. Stir in fresh spinach until wilted, about 2–3 minutes. Remove from heat and mix in Parmesan until creamy.
  6. Serve hot, garnished with basil if desired.

Notes

  • Swap in whole wheat or gluten-free pasta to suit your diet.
  • If you like spice, add a pinch of crushed red pepper flakes with the Italian seasoning.
  • Leftovers reheat well just add a splash of broth or water to loosen the sauce.
