- 1 lb (450g) ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (14 oz) crushed tomatoes
- 2 cups beef or vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (for serving)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes, or until the vegetables are softened and fragrant.
- Add the ground beef or turkey to the pot, breaking it up with a wooden spoon. Cook until browned, about 5–7 minutes. Drain any excess fat if necessary.
- Stir in the crushed tomatoes, beef or vegetable broth, tomato paste, dried oregano, dried basil, salt, and pepper. Mix well to combine.
- Increase the heat and bring the mixture to a gentle boil.
- Once boiling, add the spaghetti to the pot, breaking it in half if needed so it fits and is mostly submerged in the sauce.
- Reduce the heat to low, cover, and let it simmer for 15–20 minutes, stirring occasionally to prevent sticking, until the spaghetti is cooked al dente and the sauce has thickened.
- If the sauce looks too thick before the pasta is done, add a splash of extra broth or water. If it’s too thin at the end, simmer uncovered for a few extra minutes.
- Taste and adjust seasoning with more salt and pepper if needed.
- Serve hot, topped with chopped fresh parsley and plenty of grated Parmesan cheese.
