  • 1 lb (450g) ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14 oz) crushed tomatoes
  • 2 cups beef or vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for serving)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes, or until the vegetables are softened and fragrant.
  3. Add the ground beef or turkey to the pot, breaking it up with a wooden spoon. Cook until browned, about 5–7 minutes. Drain any excess fat if necessary.
  4. Stir in the crushed tomatoes, beef or vegetable broth, tomato paste, dried oregano, dried basil, salt, and pepper. Mix well to combine.
  5. Increase the heat and bring the mixture to a gentle boil.
  6. Once boiling, add the spaghetti to the pot, breaking it in half if needed so it fits and is mostly submerged in the sauce.
  7. Reduce the heat to low, cover, and let it simmer for 15–20 minutes, stirring occasionally to prevent sticking, until the spaghetti is cooked al dente and the sauce has thickened.
  8. If the sauce looks too thick before the pasta is done, add a splash of extra broth or water. If it’s too thin at the end, simmer uncovered for a few extra minutes.
  9. Taste and adjust seasoning with more salt and pepper if needed.
  10. Serve hot, topped with chopped fresh parsley and plenty of grated Parmesan cheese.

  • Break the spaghetti in half if necessary so it nestles easily into the pot and cooks evenly.
