Description

Crispy on the outside, tender on the inside these Parmesan Zucchini Fries are your new favorite guilt-free snack. Packed with flavor and baked to golden perfection, they make the perfect appetizer, side dish, or healthy nibble.


Ingredients

  • 2 medium zucchinis
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon olive oil
  • Cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the zucchinis into thin strips, about 1/4 inch thick, to resemble fries.
  3. In a shallow bowl, combine breadcrumbs, Parmesan, garlic powder, onion powder, salt, and black pepper.
  4. In another bowl, beat the eggs and stir in olive oil until well combined.
  5. Dip each zucchini strip into the egg mixture, let excess drip off, then coat in the breadcrumb mix, pressing gently to stick.
  6. Arrange coated zucchini fries in a single layer on the baking sheet. Spray tops lightly with cooking spray.
  7. Bake for 20–25 minutes, flipping halfway through, until golden and crispy. Serve hot!

Notes

  • For extra crispiness, try broiling the fries for the last 2 minutes of baking.
  • Swap in panko breadcrumbs for an even crunchier texture.
  • Serve with marinara sauce or garlic aioli for dipping!
