- 2 medium zucchinis
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 tablespoon olive oil
- Cooking spray
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the zucchinis into thin strips, about 1/4 inch thick, to resemble fries.
- In a shallow bowl, combine breadcrumbs, Parmesan, garlic powder, onion powder, salt, and black pepper.
- In another bowl, beat the eggs and stir in olive oil until well combined.
- Dip each zucchini strip into the egg mixture, let excess drip off, then coat in the breadcrumb mix, pressing gently to stick.
- Arrange coated zucchini fries in a single layer on the baking sheet. Spray tops lightly with cooking spray.
- Bake for 20–25 minutes, flipping halfway through, until golden and crispy. Serve hot!
Notes
- For extra crispiness, try broiling the fries for the last 2 minutes of baking.
- Swap in panko breadcrumbs for an even crunchier texture.
- Serve with marinara sauce or garlic aioli for dipping!
