  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 4 cups fresh spinach, chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
  3. Add the drained diced tomatoes to the skillet and cook for another 3-4 minutes, allowing the flavors to meld. If using, stir in the red pepper flakes for a bit of heat.
  4. Next, add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
  5. Combine the cooked penne pasta with the tomato and spinach mixture in the skillet. Toss well to ensure the pasta is evenly coated with the sauce.
  6. Remove from heat and sprinkle with grated Parmesan cheese. Toss again and serve hot, garnished with fresh basil leaves.

Notes

For extra richness, add a splash of pasta cooking water to help bind the sauce. Fresh cherry tomatoes can be substituted for canned – simply halve them and cook until softened. Baby spinach works perfectly and requires no chopping.
