Ingredients
Scale
- 1 stick (1/2 cup) butter
- 1 egg, lightly beaten
- 1 cup milk
- 1 cup all-purpose flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cans (20 oz each) pineapple chunks, drained
- 8 oz cream cheese, cut into small pieces
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter and pour it into a 9×13-inch glass baking dish.
- In a small bowl, mix together the egg, milk, flour, sugar, baking powder, and salt until smooth.
- Pour the batter directly over the melted butter in the baking dish—do not stir.
- Add the drained pineapple chunks, arranging them in as even a layer as possible.
- Drop the cream cheese pieces evenly over the top.
- Bake for 45 minutes, or until the top is golden brown and the edges are bubbling.
- Serve warm, maybe with a scoop of vanilla ice cream!
Notes
- Don’t stir the batter into the butter—it bakes into a delicious layered crust.
- You can swap in pineapple tidbits for smaller bites or try peach or cherry pie filling for a twist.
- Best served warm, but leftovers can be stored in the fridge and gently reheated.
