Crispy on the outside, melty on the inside these Reuben Egg Rolls bring all the flavors of a classic Reuben sandwich into a fun, handheld bite! Packed with savory corned beef, tangy sauerkraut, gooey Swiss cheese, and creamy dressing, then fried to golden perfection, these egg rolls are an irresistible appetizer or snack. Serve them with Dijon mustard or extra dressing for a tasty twist on a deli favorite!

  • 1 cup cooked corned beef, shredded
  • 1 cup sauerkraut, drained and chopped
  • 1 cup Swiss cheese, shredded
  • 1/4 cup Russian or Thousand Island dressing
  • 10 egg roll wrappers
  • Oil for frying
  • Dijon mustard, for serving (optional)

Instructions

  • In a mixing bowl, combine the shredded corned beef, chopped sauerkraut, shredded Swiss cheese, and Russian or Thousand Island dressing. Mix well until evenly coated.
  • Lay an egg roll wrapper on a clean surface, with one corner pointing toward you. Place about 2-3 tablespoons of the filling in the center.
  • Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little water on the edges to help seal the egg roll. Repeat with the remaining wrappers and filling.
  • In a large skillet or deep fryer, heat oil over medium-high heat. Once the oil is hot, carefully add the egg rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side.
  • Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with Dijon mustard or additional dressing for dipping.

Notes

  • To keep the egg rolls crispy, avoid overfilling them with dressing.
  • If you prefer a healthier alternative, air-fry the egg rolls at 375°F (190°C) for 8-10 minutes, flipping halfway through.
  • Store leftovers in an airtight container in the fridge and reheat in the oven or air fryer for best results.
