  • 1 pound Italian sausage (sweet or spicy)
  • 2 large sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss diced sweet potatoes with olive oil, salt, and pepper in a large bowl. Spread them out on a baking sheet in a single layer and roast for 20 minutes until tender and caramelized.
  • Meanwhile, heat a large skillet over medium heat. Cook the Italian sausage until browned and fully cooked, breaking it into smaller pieces. Set aside.
  • In the same skillet, sauté the chopped onion and bell peppers for 5-7 minutes until softened.
  • Add minced garlic and cook for another 1-2 minutes until fragrant.
  • Whisk together honey, soy sauce, apple cider vinegar, and ground ginger in a small bowl. Pour this sauce over the vegetables and stir.
  • Return the cooked sausage to the skillet and stir to combine. Cook for 2-3 minutes to meld the flavors.
  • Add roasted sweet potatoes to the skillet and gently toss everything together. Cook for another 2 minutes until heated through.
  • Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, use spicy Italian sausage or add a pinch of red pepper flakes.
  • You can swap out the sweet potatoes for butternut squash if you prefer.
