  • 4 medium potatoes, diced

Instructions

  2. Add potatoes, carrots, onion, and garlic to the slow cooker and place chicken on top.
  3. Pour in chicken broth, sprinkle with thyme and rosemary, and season with salt and pepper.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken and vegetables are tender.
  5. Shred the chicken with two forks, stir back into the slow cooker, and adjust seasoning. Garnish with parsley and serve hot.

Notes
