  • 1 red bell pepper, sliced

Instructions

  1. Arrange the chicken thighs in a single layer at the bottom of your slow cooker.
  2. Layer the sliced onion, red bell pepper, green bell pepper, and minced garlic over the chicken.
  3. Pour in the diced tomatoes and chicken broth, then stir in the tomato paste until well blended.
  4. Add the dried oregano, basil, and red pepper flakes if using. Season with salt and pepper.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and easily shreds.
  6. Use two forks to shred the chicken directly in the slow cooker, stirring it into the flavorful sauce.
