  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth (low-sodium recommended)
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • 3 cups egg noodles
  • 1 cup frozen peas
  • Fresh parsley, chopped, for garnish

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Add the chicken broth, carrots, celery, onion, garlic, thyme, parsley, bay leaf, salt, and pepper.
  3. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the chicken is cooked through and tender.
  4. Remove the chicken and shred with two forks; return the shredded chicken to the slow cooker.
  5. Add the egg noodles and frozen peas. Stir, cover, and cook on HIGH for about 20–30 minutes, until the noodles are tender.
  6. Discard the bay leaf. Taste and adjust seasoning. Ladle into bowls, garnish with fresh parsley, and serve warm.

Notes

  • If the soup thickens after adding noodles, splash in more broth or water to loosen.
  • If you prefer firmer noodles, cook them separately on the stovetop and stir into the soup just before serving.
