- 4 carrots, sliced
- 3 potatoes, diced

- 4 cups chicken broth
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Arrange the chicken thighs in the bottom of the slow cooker.
- Layer the carrots, potatoes, onion, and garlic on top.
- In a bowl, whisk together chicken broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour over the ingredients.
- Cover and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is tender.
- Stir in frozen peas 30 minutes before serving and let them heat through.
- Shred the chicken with two forks, return it to the stew, and mix gently.
- Taste and adjust seasoning, then garnish with fresh parsley before serving.

- You can substitute chicken breasts if preferred, though thighs stay juicier.
- For a thicker stew, mash a few potato pieces near the end of cooking or add 1 tablespoon of cornstarch mixed with 2 tablespoons of water.
