- 4 boneless, skinless chicken breasts
- 8 oz cream cheese, softened
- 1 packet ranch seasoning mix (about 1 oz)
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup green onions, chopped
- Salt and pepper, to taste
Instructions
- Place the chicken breasts in the bottom of the slow cooker in a single layer, if possible.
- In a mixing bowl, combine the softened cream cheese, ranch seasoning mix, and chicken broth. Whisk or stir until smooth and well blended.
- Pour the cream cheese mixture evenly over the chicken, making sure all of the chicken is coated in the sauce.
- Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the chicken is very tender and shreds easily with a fork.
- Once cooked, remove the lid and shred the chicken directly in the slow cooker using two forks, mixing it into the creamy sauce.
- Add the shredded cheddar cheese and chopped green onions. Stir until the cheese is melted and everything is well combined and creamy.
- Taste and season with salt and pepper as needed before serving. Serve hot with your favorite sides.
