  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cream cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the slow cooker as the base.
  2. Add white beans, corn, diced tomatoes, onion, garlic, chicken broth, and spices.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  4. Remove the chicken, shred it, then return it to the slow cooker.
  5. Stir in cream cheese and sour cream until smooth and creamy.
  6. Cook for an additional 15–20 minutes on low until heated through.
