Description

These Slow Cooker French Dip Sandwiches turn a simple chuck roast into incredibly tender, juicy beef bathed in savory au jus. Piled high on toasted hoagie rolls with melted provolone and served with a rich dipping broth, they’re pure comfort food. Effort is minimal your slow cooker does the work making this an easy, crowd-pleasing meal for any busy day.


Ingredients

  • 3 pounds beef chuck roast
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 6 hoagie rolls
  • 6 slices provolone cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the beef chuck roast in the bottom of the slow cooker. Season generously with salt and pepper on all sides.
  2. Add the sliced onion and minced garlic over and around the roast.
  3. In a medium bowl, whisk together the beef broth, water, Worcestershire sauce, soy sauce, dried thyme, and dried rosemary.
  4. Pour the broth mixture evenly over the roast and onions in the slow cooker.
  5. Cover and cook on LOW for about 8 hours, or on HIGH for about 4 hours, until the beef is very tender and shreds easily with a fork.
  6. Transfer the roast to a cutting board and shred the meat using two forks, discarding any excess fat. Return the shredded beef to the slow cooker and stir to combine with the cooking juices.
  7. Preheat the broiler. Split the hoagie rolls and place them on a baking sheet. Pile each roll with a generous portion of shredded beef, letting some of the liquid drip off first.
  8. Top each sandwich with a slice of provolone cheese. Place under the broiler for 2–3 minutes, watching closely, until the cheese is melted and bubbly and the rolls are lightly toasted.
  9. Ladle some of the hot cooking liquid into small bowls for dipping. Serve each sandwich with a side of au jus and garnish with chopped fresh parsley, if desired.

Notes

  • If your slow cooker runs hot, start checking the beef earlier; it should shred easily but not be dry.
  • Taste the au jus before serving and adjust the seasoning with a bit more soy sauce, Worcestershire, or salt if desired.
  • Lightly toasting the rolls before adding the beef helps them hold up better when dipped in the broth.
