Description
These Slow Cooker French Dip Sandwiches turn a simple chuck roast into incredibly tender, juicy beef bathed in savory au jus. Piled high on toasted hoagie rolls with melted provolone and served with a rich dipping broth, they’re pure comfort food. - 3 pounds beef chuck roast
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 6 hoagie rolls
- 6 slices provolone cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Place the beef chuck roast in the bottom of the slow cooker. Season generously with salt and pepper on all sides.
- Add the sliced onion and minced garlic over and around the roast.
- In a medium bowl, whisk together the beef broth, water, Worcestershire sauce, soy sauce, dried thyme, and dried rosemary.
- Pour the broth mixture evenly over the roast and onions in the slow cooker.
- Cover and cook on LOW for about 8 hours, or on HIGH for about 4 hours, until the beef is very tender and shreds easily with a fork.
- Transfer the roast to a cutting board and shred the meat using two forks, discarding any excess fat. Return the shredded beef to the slow cooker and stir to combine with the cooking juices.
- Preheat the broiler. Split the hoagie rolls and place them on a baking sheet. Pile each roll with a generous portion of shredded beef, letting some of the liquid drip off first.
- Top each sandwich with a slice of provolone cheese. Place under the broiler for 2–3 minutes, watching closely, until the cheese is melted and bubbly and the rolls are lightly toasted.
- Ladle some of the hot cooking liquid into small bowls for dipping. Serve each sandwich with a side of au jus and garnish with chopped fresh parsley, if desired.
Notes
- If your slow cooker runs hot, start checking the beef earlier; it should shred easily but not be dry.
- Taste the au jus before serving and adjust the seasoning with a bit more soy sauce, Worcestershire, or salt if desired.
- Lightly toasting the rolls before adding the beef helps them hold up better when dipped in the broth.
