- 1 packet Italian dressing seasoning mix
- 1 cup chicken broth
- 1 (10.5 oz) can cream of chicken soup
- 1 (8 oz) block cream cheese, cut into cubes
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 8 oz penne pasta
- 1 cup fresh spinach, finely chopped
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Place chicken breasts in the slow cooker and sprinkle Italian dressing seasoning evenly over them.
- Pour in chicken broth and cream of chicken soup. Add cubed cream cheese on top.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and shreds easily.
- Shred the chicken directly in the slow cooker and stir to combine with the sauce.
- Add Parmesan cheese and heavy cream, stirring until the sauce is creamy and smooth.
- Meanwhile, cook penne pasta according to package instructions until al dente. Drain and set aside.
- Stir the cooked pasta and chopped spinach into the slow cooker. Season with salt and pepper to taste.
- Cover and let sit for 10–15 minutes to allow flavors to meld and spinach to soften.
- Serve warm, garnished with chopped parsley.
