  • 1 jar (16 oz) pepperoncini peppers, with juice
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Heat the olive oil in a skillet over medium-high heat. Season the chuck roast with salt and pepper, then sear each side for 3–4 minutes until beautifully browned.
  2. Transfer the roast to the slow cooker. Add the sliced onion, minced garlic, and the entire jar of pepperoncini (including the juice).
  3. Mix the beef broth, Worcestershire sauce, and chopped rosemary in a small bowl. Pour evenly over the roast and vegetables.
  4. Cover and cook on LOW for 8–10 hours or HIGH for 4–6 hours, until the beef is fork-tender.
  5. Let the roast rest for a few minutes, then shred and serve with the pepperoncini-onion mixture spooned over the top.
